How to store our sourdough bread:
Each loaf is baked in the morning of the day our customers arrive to the truck for pickup.
Our Sourdough breads can be kept fresh in a cotton bag or wrapped in a tea towel for 2 days.

If you plan to enjoy it later, we recommend to freeze your bread (after slicing it) on the day of the pickup. The best way is to freeze that portion of the bread 2-4 slices together in the same Ziploc bag with a small parchment paper in between the slices. Whenever you want to enjoy some fresh slices, you just pull a Ziploc bag from the freezer and let it thaw on the countertop without any heating or baking.
How to "refresh" frozen bread:
You can also freeze a whole loaf of bread. In this case we recommend the following steps:
1. Thaw it to room temperature ( leave it on the kitchen counter overnight).
2. "Bathe" the loaf (but not soaking wet),
3. Put in a 400F oven for about 10 minutes.
4. Enjoy!

You can do this method (refresh) when the bread is 3 days old, it will come back nice and soft inside, crispy outside.

A sourdough starter is a culture of yeasts and bacteria. It is created when a mixture of flour and water slowly starts to ferment naturally, thanks to the wild yeast that is everywhere around us. As a result, we get a pungent, gloppy brew that will act as a natural substitution for the store-bought baker’s yeast in our pizza or bread dough. It is also referred to as “mother yeast”.
The bacteria culture in sourdough starter is connected to great and natural things in life: cheese, beer, bread. These are all fermented naturally by the same bacteria cultures as you make your sourdough bread with.
The bacteria culture in sourdough starter provides a much thorough flour fermentation comparing to the work of regular baker's yeast. The result of this lengthier fermentation is that sourdough bread has a lower glycemic index that helps maintaining blood sugar level, which is crucial when someone is dealing with diabetes. A growing number of studies show that those who eat sourdough bread has lower blood sugar and insulin levels than those who eat breads fermented with baker's yeast.

REACTIVATION INSTRUCTIONS FOR OUR DEHYDRATED SOURDOUGH STARTER:
It is basically the world’s oldest form of dough fermentation. Sourdough is a type of bread/pizza crust that is naturally leavened by an agent called sourdough starter instead of using commercial baking yeast. In traditional sourdough recipes, you’ll find four ingredients: sourdough starter, water, salt and flour. It’s about as natural as you get when it comes to bread. The lactic acid content of the sourdough starter gives sourdough bread its distinctive flavour.
