The owners / operators
Akos and Erika are husband and wife; they are the owners and only operators of A's Pizza.
Akos has 20+ years of experience in the pizza business. He was the manager of a pizza shop in Ireland before they came to Canada in 2011. In Canada, he worked in Italian restaurants and he also developed complete pizza operations for various establishments. Both owners have a bachelor degree in Business Management. In this small family business, Akos is responsible for the kitchen operation while Erika manages the business' PR/Marketing/Social Media/etc. They have 2 wonderful kids (adults).

Why is Akos' pizza so unique?
Over 20 years of pizza-making experience, combined with the use of one of the world's finest pizza flours from Naples, Italy, creates an extremely light pizza crust. A's Pizza Truck is the only pizza business that uses only hand-kneaded dough (made entirely from scratch by Akos himself). He also uses a very high temperature stone oven and only fresh ingredients. He does not use a rolling pin or a pizza screen, making sure that his pizza crust is airy and fluffy.
A's Pizza is the only Sourdough Pizza place and SOurdough micro bakery in the area, making delicious and unique sourdough products.

We're serving A's Sourdough pizzas form 4:30 at the NewRoads Chevrolet, and we're going to have a few A's Sourdough loaves too.

What is Sourdough?
Sourdough is an old form of bread leavening. It relies on a mix of wild yeast and lactic acid bacteria that are naturally present in flour, rather than baker's yeast, to leaven the dough.
Sourdough's basic nutrition profile resembles that of other breads, but it has a few special properties that make it more nutritious. It contains higher levels of folate and antioxidants than other breads. Also, its lower phytate levels allow your body to absorb the nutrients it contains more easily.
Sourdough bread has its prebiotic- and probiotic-like properties may help improve digestion, its fermentation produces changes in the bread that may allow for better blood sugar control and improved insulin sensitivity.
How can you order A's gluten free pizza (PICK UP ONLY)?
The gluten free pizzas will be 12” in size and sold as whole pizzas and for preorders only! Orders have to be placed by Wednesday night for pickup on Friday. Please check our schedule! Making the gluten free crusts is a much lengthier process, so these deadlines ensure that all orders will be made fresh from scratch every week. You will see our gluten free menu when you scroll down.
There are 2 buying options for the gluten free pizzas:
1. We partially bake your gluten free pizza. In this case you have to finish baking your pizza in your oven at home, but this is the way to minimize the chance of any gluten contamination. You can order your parbaked GF pizzas via our online store. Pick up is between 3:00-6:00 at the NewRoads Mazda Dealership (Friday Pick up) Pls check our schedule. 2. You can order your gluten free pizza fully baked. In this case we bake your pizza in the truck’s oven, however your pizza will be subjected to the gluten pieces in the oven, carrying a higher chance for gluten contamination.

Bake your fresh, gluten free pizza on your on time, in your own home
Enjoy a freshly baked, gluten free pizza in your own kitchen anytime by choosing our Take 'n' Bake option. You just have to preheat your oven to 400 F and bake your gluten free pizza on any tray for 10-15 minutes (depending on the performance of your oven). And if you plan a family pizza dinner for a later day, then you can keep your gluten free pizza in your fridge for up to 3 days.
GF Crust Ingredients
We use authentic, genuine Italian gluten free pizza flour for our very own, very unique, one of a kind, gluten free sourdough pizza.
Ingredients: Gluten free wheat starch, dextrose, maize starch, buckwheat flour, rice starch, vegetable fibers, olive oil, thickener: guar, flavouring, psyllium husk.

Should you prefer to have your pizzas/calzones straight out of the oven, please send us (social media message or text) your pizza/calzone order (sourdough, signature or GF crust) and your preferred pick-up time. We will then inform you of the available time slot for your order. It is important to note that we require confirmation from you to schedule your order. For larger orders, we will need to receive payment prior to confirming your pizza booking.
Alternatively, if you are content with our previous ordering system: ordering your parbaked (you'll need to bake your pizza at home) or fully baked pizzas (in this case, you'll need to heat your pizzas at home) online, then pick the order up on Friday after 3pm), you may continue to place your pizza/calzone orders through our online store. However, please be aware that we will have a limited quantities available in our online store, and all orders must be placed by Thursday early evening.

We offer a weekly pizza special. We run that pizza for 1 week only (check our photos). We post our weekly special on our social media sites. From the moment the menu (special of the week) is up, whole pizza orders start coming in. It is very important to send your orders as soon as possible.
We have 3 pizza services every week.
Go to "HOURS, LOCATION and CALENDAR" section for the monthly location schedule!
We ONLY make whole pizzas by orders. It is very rare when we can serve walk-ins at our dinner services.
We are a food truck, we do NOT deliver, pick up only.
You can always customize your order with toppings you see on our menu. You can also order half & half pizzas.
When you send your order, pls send us your pizza choice(s) and preferred pick up time.

Our artisan sourdough process takes 24hrs from start to finish, therefore all SOURDOUGH BREAD ORDERS NEED TO BE PLACED by WEDNESDAY NIGHT!

A's parbaked pizza
Q.: What are the benefits of a parbaked pizza?
A.: The original concept of the parbaked pizza is that you can enjoy a freshly baked A’s pizza on a day when we are not open for business, or the circumstances just doesn't allow you to come to the truck for a ready-to-eat one, or you travel farther with the pizza and you are looking for an even fresher alternative than reheating the fully baked pizza (traveling to cottage, visiting a friend, etc.). We give you the parbaked pizza cold, so you can finish it in your oven with only 10-15 minutes baking. Basically you only have to melt the cheese on it, and by this time the toppings get cooked to the perfect level. If you want to enjoy our parbaked pizza on another day, it can be kept in your fridge for another 2-3 days before finishing it off in your oven. If you decide to enjoy the pizza later than 2-3 days, you can freeze it, then you can bake it from frozen state.
Q.: “Do they come out as well as when you guys make them?”
A.: Our partially baked pizza is the second best thing. Obviously it won’t be exactly the same as the freshly baked pizza coming out of the truck’s oven, but it will be very close. The key is that we do the heavy lifting for you and bake the crust in our oven 90% done. That’s the crucial part you can’t replicate in your household oven. That’s why we do it for you.
Q.: How to place an order for parbaked pizza?

Q.: Can we order parbaked sourdough pizzas?
A.: Yes, we offer fully baked and parbaked sourdough pizzas for Friday pick up (not for Wednesday).
We make our parbaked pizzas from scratch before we start to make the fully baked pizzas, so you always get FRESH parbaked pizzas from us. Parbaked pizzas take more time to make and we can't take unlimited parbaked orders. When we reach our maximum capacity, we can't take more orders.
Q.: Do we have to schedule a pick up time for parbaked pizzas?
A.: No, you just have to come to the truck
- Between 3:00am and 6:30pm at NewRoads Mazda (Friday) dealership. Pls check our monthly schedule! Don't forget, you need to place your parbaked pizza orders via our online store, the deadline is Thursday late afternoon.
Q.: What are the baking instructions for parbaked pizzas?
A.: 1. Preheat your oven to 450F
2. Slide the pizza onto a baking tray.
3. Bake it for 10-15 minutes, until the cheese is nicely melted (depending on the oven’s performance). Check the pizza with your finger. Is it crispy enough for your liking? if not leave it in for about 5 more minutes.
4. If the crust is crispy enough but you want a crispier top you can switch your oven to broil for 1-2 minutes (keep your eyes on it!! Broiling happens quickly)
What does a parbaked crust mean?
We use the same, A's signature or A"s sourdough pizza dough that you are used to when you enjoy A's Pizza's famous fully baked pizzas, but we bake the crust up to 90% ready (hence the name partially baked pizza, or parbaked in short). We use the same, very high temperature oven to bake the crust of your pizza to ensure a light and airy texture, even though the final stage of the baking process is done in your home oven in only 15-20 minutes. You can choose any pizza from our weekly menu as partially baked.
