How to store A's Sourdough Bread

A USEFUL TIP ABOUT OUR SOURDOUGH BREAD:

Each loaf is baked in the morning of the day our customers arrive to the truck for pickup.

Our Sourdough breads can be kept fresh in a bag or wrapped in a tea towel for 2 days. If you plan to enjoy it later, we recommend to freeze your bread (after slicing it) on the day of the pickup. The best way is to freeze that portion of the bread 2-4 slices together in the same Ziploc bag with a small parchment paper in between the slices. Whenever you want to enjoy some fresh slices, you just pull a Ziploc bag from the freezer and let it thaw on the countertop without any heating or baking.

You can also freeze a whole loaf of bread. In this case we recommend the following steps:

1. Thaw it to room temperature ( leave it on the kitchen counter overnight).

2. "Bathe" the loaf (but not soaking wet),

3. Put in a 400F oven for about 10 minutes.

4. Enjoy!

If you buy A's Frozen Sourdough Bread, that's the method above we recommend to refresh your bread. https://www.youtube.com/watch?v=ETl-QYnhsLU

100% Sourdough Artisan bread

  1. 100% SOURDOUGH, no baker's yeast added!
  2. Easy to digest: The bacteria culture and wild yeast in the sourdough starter break down the starches and protein during the lengthy fermentation process of the sourdough bread, so it makes it easier on your stomach.
  3. Sourdough bread has lower glycemic index. It does not raise the blood sugar level as rapidly as the average commercial bread.
  4. Healthy bacteria: The sourdough starter contains natural bacteria cultures that are beneficial to gut health.
  5. No preservatives: Sourdough produces acetic acid which naturally prevent the growth of mold. We can enjoy a longer shelf life of our bread without adding any harmful preservatives.
  6. More nutritious than regular bread: The phytic acid in regular bread blocks the absorption of the minerals in the wheat. The long fermentation of the sourdough breaks down the phytic acid in the dough, making the nutrients available for our body.
  7. Sourdough is the most natural way: It only contain 4 simple ingredients. It is the oldest form of natural leavening or fermentation. We have been eating sourdough as a part of a natural diet for a very long time.

The Sourdough Starter Culture

Sourdough Bread is Good for You

Sourdough Bread is Good for You

WHAT IS THE SOURDOUGH STARTER?

A sourdough starter is a culture of yeasts and bacteria. It is created when a mixture of flour and water slowly starts to ferment naturally, thanks to the wild yeast that is everywhere around us. As a result, we get a pungent, gloppy brew that will act as a natural substitution for the store-bought baker’s yeast in our pizza or bread dough. It is also referred to as “mother yeast”.

The bacteria culture in sourdough starter is connected to great and natural things in life: cheese, beer, bread. These are all fermented naturally by the same bacteria cultures as you make your sourdough bread with.

THE HEALTH BENEFITS OF SOURDOUGH STARTER VS REGULAR BAKER'S YEAST

The bacteria culture in sourdough starter provides a much thorough flour fermentation comparing to the work of regular baker's yeast. The result of this lengthier fermentation is that sourdough bread has a lower glycemic index that helps maintaining blood sugar level, which is crucial when someone is dealing with diabetes. A growing number of studies show that those who eat sourdough bread has lower blood sugar and insulin levels than those who eat breads fermented with baker's yeast.

Sourdough Bread is Good for You

WHAT IS SOURDOUGH?

It is basically the world’s oldest form of dough fermentation. Sourdough is a type of bread/pizza crust that is naturally leavened by an agent called sourdough starter instead of using commercial baking yeast. In traditional sourdough recipes, you’ll find four ingredients: sourdough starter, water, salt and flour. It’s about as natural as you get when it comes to bread. The lactic acid content of the sourdough starter gives sourdough bread its distinctive flavour.

THE BENEFITS OF BAKING SOURDOUGH BREAD AT HOME

  1. Sourdough bread is very easily digestible due to natural bacteria culture in the starter (wild yeast) and longer fermentation time. Simply this is the healthiest form of bread.
  2. You are in control of what is in your loaf. 4 basic ingredients are enough to bake your bread (flour, water, sourdough starter (wild yeast), salt. No preservatives, no sugar, no harmful additives are needed.
  3. The sourdough variations are unlimited. You can choose your favourite flour combination of white flour, rye, whole wheat, spelt, creating your own favourite texture and loaf colour.
  4. You can also add your favourite seeds, fruits, vegetables (even chocolate) to your dough mix. The limit is your own creativity and guaranteed that you won't find these masterpieces in any stores.
  5. YOU CAN MAKE SURE THAT YOUR BREAD IS REALLY 100% SOURDOUGH. The majority of sourdough breads sold in stores contains certain amount of baker's yeast. The reason for that is to speed up the fermentation, therefore most of the store-bought sourdough breads will not provide the health benefits coming from the long fermentation of the authentic sourdough breads.
  6. Baking sourdough bread is a very relaxing and satisfying activity. For a short time you can forget about all the stress of this modern life and travel back  in time to bake the family's favourite bread the exact way your great grandma was doing back then.
  7. Unlike many things in our current life, sourdough baking requires very simple equipments. simplicity is the key word. Our ancestors did not have and did not need fancy kitchen gadgets in order to bake sourdough bread throughout the last 4 thousand years. Here is the link to our blogpost about the basic requirements for baking sourdough at home: https://commonsensebaking.blogspot.com/2023/02/sourdough-most-natural-way-to-make-bread.html
